Title: Optimization of extracting the dietary fiber from corn bran.
Abstract: Effects of dose,temperature,time and pH value of enzyme for extracting dietary fiber from corn bran by single-factor test and orthogonal test. The results proved that the optimum conditions for extraction were dose of multiple enzyme 1.2%,temperature 60 ℃,time 55min and pH value 7.0. And the extraction efficiency could be 62.5%. Extrusion conditions for improving quality of dietary fiber were water dose 20% in material,temperature 130℃ and screw speed 130 r/min. And content of soluble dietary fiber (SDF)of corn bran could be increased from 15.87% to 21.65%.
