Title: Optimization of the Technology of Extracting Dietary Fiber from Wheat Bran
Abstract: The technology for extracting the dietary fiber from wheat bran by the combined chemical and enzyme method was studied. The result indicated that the extraction with 1mol/L NaOH at 90℃ for 45min, and 2.33%α-amylase at 65℃ fo r 20min is better. Under this condition, we can get higher extracting rate of dietary fibre about 30.42%. And the content of TDF and SDF is 86% and 23.28% separ ately.
