The results showed that they had stronger reducing capacity, antioxidant activity on lipid-peroxidation, and scavenging effects on DPPH radical and superoxide anion. In the range of test concentration, the maximum scavenging or inhibition rate to linoleic acid auto-oxidation, DPPH radical and super oxide anion was 52.05%, 95.61% and 77.45% respectively, the results suggested that black corn pigment has antioxidant activities and broad application prospects.Read More
