The results show that the anthocyanin extracts possess antioxidant activity in dosage-dependent manner which varies with the type of model systems. The DPPH radial scavenging activity of the samples under investigation is equivalent to 28.76% of the ascorbic acid. The hydroxyl free radical scavenging activity of the samples is equivalent to 47.00% of the ascorbic acid. The total antioxidant capacity of the samples is equivalent to 10.22% of the ascorbic acid.Read More
