Abstract:In this study,folium perilliae,purple cabbage,black rice and purple sweet potato were studied to assess their antioxidant activity by different analytical methods: total reducing activity,inhibitory e...In this study,folium perilliae,purple cabbage,black rice and purple sweet potato were studied to assess their antioxidant activity by different analytical methods: total reducing activity,inhibitory effect on lipid peroxidation,free radical-scavenging activity on DPPH and superoxide anion radical.The results showed that they had reducing capacity.According to the test concentration,the maximum scavenging rate on the peroxidation of linoleic acid was 24.56%,33.04%,45.61%,54.39%;the maximum scavenging rate on DPPH was 92.59%,93.2%,78.4%,66.29%;the maximum inhibition rate on superoxide anion radical was 46.85%,57.69%,41.2%,65.08%.They were natural,excellent,edible and strong antioxidative pigment.Read More
