Abstract:Biological components,amino acid and fatty acid composition in muscles of young and adult P.chinensis were tested and analyzed with routine methods.The results showed that there were significant diffe...Biological components,amino acid and fatty acid composition in muscles of young and adult P.chinensis were tested and analyzed with routine methods.The results showed that there were significant differences in proximate composition between young and adult fish.Except moisture content,the content of crude ash,crude protein and crude lipid in muscles of adults were significantly higher than those of young fish(P0.05).Muscles of young and adult P.chinensis included 18 common amino acids and 8 essential amino acids for human needs(no analysis was made for Cys).In dry samples,the total content of amino acids were 78.68% and 72.92% for adult and young P.chinensis;the content of essential amino acids were 33.26% and 31.05%,and the percentage of essential amino acids in total amino acids were 42.28% and 42.58% for adult and young P.chinensis,respectively.It was apparent that the content of different amino acids was stable and the composition of essential amino acids met the FAO/WHO Standard.According to nutritional evaluation in amino acids score(AAS) and chemical score(CS),the first limited amino acid was Trp,and the second was Met + Cys both in young and adult P.chinensis;the essential amino acids index(EAAI) were 62.16 and 77.68,respectively;in dry samples,the content of four kinds of delicious amino acids were 28% and 26.44% for adult and young P.chinensis.There were 20 kinds of fatty acids found in muscles of adults,of which 7 kinds were saturated fatty acid(SFA),5 kinds monounsaturated fatty acid(MUFA) and 8 kinds polyunsaturated fatty acid(PUFA);whereas 21 kinds of fatty acids were detected in muscles of young P.chinensis,including 8 kinds of SFA,6 kinds of MUFA and 7 kinds of PUFA.Both adult and young P.chinensis had low EPA content and high DHA content.The percentage of EPA in total fatty acids of adult and young P.chinensis were 2.49% and 4.86%,respectively;the percentage of DHA was 10.26% and16.23% for adult and young P.chinensis,respectively.The A/E ratio of essential amino acids in muscles of adult and young P.chinensis were similar,and the descending order of A/E ratio for ten essential amino acids were Lys,Leu,Arg,Val,Ile,Thr,Phe,Met,His and Trp.Read More
