Abstract:Nutritional components in the muscle of Spinibarbus sinensis were tested and analyzed with routine methods.Samples of 5 pond-cultured individuals were collected from Sichuan Freshwater Fisheries Insti...Nutritional components in the muscle of Spinibarbus sinensis were tested and analyzed with routine methods.Samples of 5 pond-cultured individuals were collected from Sichuan Freshwater Fisheries Institute in March of 2004.The results showed that contents of crude protein,crude fat,moisture,ash and carbohydrates of fresh muscles were 19.22%,1.96%,77.0%,1.62% and 0.18% respectively.The composition of amino acids of muscle was 17 common amino acids and 7 essential amino acids for human needs(no analysis was made for tryptophane).In dry sample the total content of amino acids was 73.61%;the content of essential amino acids was 32.26%;the percentage of essential amino acids in total amino acids were 43.83%;the ratio of amino acids to no-essential amino acids (EAA/NEAA) was 78.02%.It was apparent that the content of the different amino acids was stable and the constitutional rate of the essential amino acids accorded with the FAO/WHO Standard,fundamentally.According to nutrition evaluation in amino acids score(AAS) and chemical score(CS),the first limited amino acid was Met+Cys,and the second limited amino acid was valine and Phe+Tyr;the essential amino acids index(EAAI) was 71.34;in dry sample the content of four kinds delicious amino acids was 24.22%.The contents of EPA and DHA in fatty acids were 0.87% and 3.08%,which were higher than some other economic fishes;the composition of trace elements of Spinibarbus sinensis was reasonable.It was indicated that Spinibarbus sinensis is one of freshwater fishes with better nutritive value and raising value,deserving exploitation and utilization.Read More
