Abstract:Nutritional components in the muscle of Nemipterus japonicus were analyzed using ordinary standard methods.The results showed flesh rate was 74.96(±1.99)%,and contents of moisture,crude protein,crude ...Nutritional components in the muscle of Nemipterus japonicus were analyzed using ordinary standard methods.The results showed flesh rate was 74.96(±1.99)%,and contents of moisture,crude protein,crude fat,ash were 76.37(±0.34)%,19.48(±0.21)%,2.66(±0.02)%and 1.35(±0.02)% in fresh muscle,respectively.The total mount of 17 kinds of amino acids was 13.71%(fresh),with essential amino acids of 6.26%,accounting for 45.66% in total amino acids,and the ratio of essential amino acids and non-essential amino acids was 89%.According to nutrition evaluation in amino acids score(AAS) and chemical score(CS),the first limiting amino acid was valine and the second limiting amino acid were Met,Cys and Thr,the essential amino acid index(EAAI) was 65.30.The constitutional rate of the essential amino acids accorded with the FAO/WHO standard basically.The content of tasty amino acids was 5.39%,comprising with 39.31% in total amino acids.Read More
