Abstract: In this paper,four top-fermentation yeasts are used to produce the beers with the same concentration(12°P) in the laboratory.The appear-ance of fermentation degrees and the real fermentation,the alcohol content,the diacetyl content and the sugar consumption were determined.The content of 4-vinylguaiacol and physical and chemical index were also determined by HPLC and the automatic beer analyzer,respectively.Combina-tion with sensory evaluation,it was found that the brewing characteristics of the four top-fermented yeasts were good.
