Title: Optimization of chitosan degradation by non-specific enzyme.
Abstract: Using th chitooligosaccharides (COS) as quality indicators, the chitosan degradation by fiber enzyme was studied. The result showed that the influence order of some key factors was: pH temperature time. And the optimum degradation conditions were as follows: temperature 60 ℃, pH 3.8, and reaction time 2.5h, under which COS was achieved with its e average molecular weight of 1467.3. For industrial production of COS, the degradation conditions were determined as pH4.4, temperature 60 ℃ and time 2.5 h. Under these conditions, the average molecular weight of COS was 1000.1 with the optimum ratio of papain to cellulose of 1:1. When the ratio of papain to cellulose was determined as 1 / 3:1, COS was achieved with its average molecular weight of 1134.4.
