Abstract: Basé sur une enquête ethnographique à Chefchaouen, cet article montre que l'élevage caprin urbain est, dans le contexte actuel de développement croissant de la ville, assorti d'une forte dimension rurale. Bien qu'historiquement légitime au sein de cette petite cité marocaine de montage, il est progressivement soumis à une dynamique d'extériorisation, de déplacement vers l'espace périurbain et de plus en plus cantonné au référent paysan auquel il renvoie. L'élevage et les éleveurs sont ainsi l'objet d'un tiraillement entre urbain et rural, entre valorisation et dévalorisation. C'est pourtant bien grâce à la co-présence de ces deux caractéristiques que le jben, fromage frais, est valorisé dans tout le Maroc permettant à l'élevage urbain de perdurer.
