Title: Microwave modification of alcohol leached soy protein concentrate
Abstract: A new method of utilizing microwave to modify alcohol leached soy protein concentrate was studied,the influence factors were analyzed,such as modification time, microwave power, pH value and slurry homogenized time. The results showed that the optimum modification parameters were as follows: slurry homogenized time 8 min, pH value 9, modification time 50 s, microwave power 800 W. Under the above-mentioned modification parameters, the modified alcohol leached soy protein concentrate with NSI 67.28% and emulsion stability 90% can be obtained.
