Title: Preparation of alcohol leached sesame protein concentrate
Abstract: Preparation of sesame protein concentrate using aqueous alcohol from cold press-solvent extracted sesame meal was studied.The effects of alcohol concentration,ratio of liquid to solid,extraction temperature and time on the protein content were investigated.By single factor and response surface methodology experiment design,the optimal conditions were determined as follows:alcohol concentration 64%,ratio of liquid to solid 4.8∶1,extraction temperature 49℃ and time 54 min.Under these conditions,the protein content of sesame protein concentrate was 66.68%,and the relative error was 0.34% to the predicted value.
