Title: Effects of Temperature on Main Digestive Enzyme Acitivities in Channa asiatica
Abstract: The optimal temperatures for main digestive enzyme activities of various tissues in Channa asiatica were studied. Within the range of temperatures detected from 33 ℃ to 61 ℃,the results showed that the optimal temperatures for protease in the stomach mucosa, foregut mucosa and hepatopancreas were 40 ℃,47 ℃ and 33 ℃ respectively;for amylase were 47 ℃,54 ℃ and 47~54 ℃;and for lipase were 40 ℃,54 ℃ and 47~54 ℃. In various digestive tissues the optimal temperatures for the highest activities of different digestive enzymes were different. Under conditions of optimal temperatures, the activities of protease, amylase and lipase were stomach intestinehepatopancreas.
