However, their bioactivities lie in the aglycones. Cellulase was used to convert isoflavone glycosides extracted from black soybean and kudzu with 70% ethanol into the aglycones in this study. The compositions of isoflavone extract before and after cellulase treatment were analyzed by HPLC. The results showed that daidzin and genistin could be completely hydrolyzed into daidzein and genistein by cellulase. But the hydrolysis of malonyl daidzin, malonyl genistin and puerarin could not be found.Read More
