Title: Application of Modified Atmosphere Packing on Chilled Fresh Pork
Abstract: Compaired with the fresh and frozen meat, chilled meat has the character of safety, high nutritional value and long durability. MAP used in chilled meat can extend the shelf life and maintain the color of the meat. This paper describes the mechanism of MAP and its gas components, discussed the main points of MAP and its equipment,meanwhile analysis the key technologies of developing and application of the MAP.
