Abstract:The main nutritional ingredients and five kinds of mineral elements(Cu,Zn,Ca,Mg,Fe) of the rice samples and rice brans in each stage of rice whitener were determined and analyzed.The results show that...The main nutritional ingredients and five kinds of mineral elements(Cu,Zn,Ca,Mg,Fe) of the rice samples and rice brans in each stage of rice whitener were determined and analyzed.The results show that brown rice had more nutritional ingredients and mineral elements than polished rice;the rice bran in first stage was abundant in oil and protein,their mass fraction were 21.88%,15.57% respectively;the mass fraction of oil and protein of the rice bran in second stage was also higher and they were 13.26%,13.41% respectively;the starch of the rice bran in third stage reached up to 51.39%.More mineral elements presented in the rice bran.The total amount of 5 mineral elements in rice bran were 13 006.81,9 901.53,6 767.78 μg/g in turn,these were obviously higher than those in the rice samples.The order of mineral elements content in rice was MgCaZnFeCu.Read More
