Title: Application of high pressure technology in meat products
Abstract: Based on the characteristics of Ultra-high pressure (UHP) technology,application of high pressure technology in meat processing including improving the quality of meat products,meat products' sterilization,insecticidal effect and the preservation of meat products was introduced in this paper.The prospect of UHP application in meat products was also mentioned.
