It is a linear, unbranched exopolysaccharide that has β-D-glucopyranose units linked by β-1,4 glycosidic bonds. Its structure is like ultrafine nanofibrils, forming a 3D web-shaped construction. Nowadays, bacterial nanocellulose has a multifaceted importance in the textile, biomedical and agro-waste industry. Production of nanocellulose by bacteria is driving more attention as compared to normal plant-based nanocellulose despite sharing the same molecular formula ((C 6 H 10 O 5 ) n ) due to the higher tensile strength, better fibrillary texture, thermal stability etc. Stabilization of such a structure is done by intermolecular and intramolecular hydrogen bonds. Through the coupling of the two processes polymerization and crystallisation, bacterial nanocellulose production is carried out in bacteria. Cellulose synthase is the prime enzyme for bacterial nanocellulose production. The enzyme has four subunits - BcsA, BcsB, BcsC and BcsD. They are encoded by three (bcsAB, bcsC and bcsD) or four (bcsA, bcsB, bcsC and bcsD) genes. Moreover, there are several factors upon which nanocellulose production depends, some of which are - temperature, carbon source, moisture content, pH of the medium, presence of organic acid, etc. Therefore, in this chapter we have compared and analysed the diversified nature of bacterial nanocellulose production, mainly concentrating upon the following bacterial genera - Escherichia coli , Komagataeibacter sp., Agrobacterium sp., and Lactobacillus sp . In addition, characterization of bacterial nanocellulose by several techniques such as AFM, FTIR, XRD, SEM has also been discussed.
