Abstract: The papers in this volume were part of those submitted to the 19th International Symposium on Medical Information Processing and Analysis (SIPAIM 2023).The event was held in Mexico City, Mexico on November 15-17, 2023 as an international symposium in which researchers from Latin America interact with each other and with their peers from around the world.SIPAIM is focused on bringing together the Latin American medical image analysis and information processing communities, and on creating a forum in which to discuss recent results, ongoing research and future projects and collaborations, both within Latin America, and with researchers around the world. The symposium welcomes researchers, students and professionals from a wide range of disciplines including engineering, physics, mathematics, computer science, biology and health sciences. This year's meeting included keynote lectures by four recognized experts who discussed machine learning applications for dermatology; service, research and training for the bioimaging community; translation of AI into radiology clinical practice; and AI tools for children with critical heart disease. We also had two special sessions and a highly successful pre-conference course at The Institute of Biotechnology at the Universidad Nacional Autónoma de Mexico, in Cuernavaca, that was held on November 14, 2023.SIPAIM 2023 had 64 papers accepted for oral presentations after being reviewed by experts in the area.In addition, we had 8 abstracts that were presented as posters at the conference. The wide array of subjects, including digital pathology, medical imaging, e-health, brain imaging, cancer imaging, biosignal analysis and applications of AI to healthcare, bears witness to the growing importance of medical and biomedical research among the LatAm scientific community, and points to many opportunities for international collaborations. The editors would like to thank the authors, reviewers and committee members, without whom the publication of the present volume would not have been possible.Likewise, we would like to thank
