Abstract: ANGGIRASTI. Lipase-Catalyzed Glycerolysis of Refined Bleached Deodorized Palm Oil for the Mono-diacylglycerol Synthesis. Directed by PURWIYATNO HARIYADI, NURI ANDARWULAN, and TRI HARYATI Indonesia is among the largest palm oil producing countries and the production is still increasing therefore, product diversivication should be done in order to obtain higher added value to the country. One of the potential products is palm based emulsifier. Mono-diacylglycerol (MDAG) is the mostly used emulsifier in food industry. Enzymatic synthesis of MDAG by lipase catalyst has received much attention in recent year owing to the lower energy requirements, selectivity of the catalyst and higher product purity and quality. The aim of this study was to optimize production of MDAG by lipase-catalyzed glycerolysis. Esterification of glycerol and RBDPO using lipase as catalyst is used to synthesize MDAG. Thirteen batch reactions consisting of refined bleached deodorized palm oil (RBDPO), glycerol, and commercially lipase were carried out, with two process parameters being varied : reaction time and temperature. Respon surface methodology (RSM) was applied to optimize the reaction system. Production yield, MAG, DAG and TAG contents were used as model response. After getting the optimum condition from respon surface equation, a trial of five replicates to verify its consistency was conducted. MAG, DAG and TAG content in the product were analyzed using thin layer chromatography method. The physicochemical properties of the product namely free fatty acid, iodine value, melting point and HLB value were also determined. The optimal conditions established for reaction time 19,86 hour and temperature 60,3°C. Under this condition production yield of 83,06% with 42,08% MAG content was predicted. Verification experiments under optimized reaction conditions were conducted, and the result agreed well with the range of prediction. The yield obtain under this condition is 82,45% with composition of MAG and DAG are 43,26% and 47,98% respectively. The product melting point was higher than RBDPO i.e. 49,0-51,5 C, iodine value was 46,82, free fatty acid content was 0,15% and hydrophilic lypophilic balance (HLB) value was 9,15.
