Abstract: Sesame ( Sesamum indicum L .) is an oil seed crop of Indian origin. Its oil content varies from 45-63 per cent with an average of 54 per cent whereas protein content varies from 17-32 per cent with an average of 26 per cent. Fat free meal has been reported to contain about 60 per cent protein, rich in sulfur containing amino acids.
