Title: Taste Interactions of Sweet and Bitter Compounds
Abstract: Studies of sweet and bitter taste mechanisms and sweet and bitter compounds indicate that there may exist some relationship between sweet taste receptors and bitter taste receptors. These studies include the discovery of sweet taste inhibitors which also block some bitter tastes. We describe the interactions between sweet and bitter tastes, as well as interactions of sweet and bitter compounds with food components and with food additives intended to inhibit sweet or bitter taste.
