Title: Effect of aerating treatment on physiological activities and essential substances in germinating brown rice
Abstract: Brown rice was soaked into distilled water, and aerated with air at 0, 0.5, 1. 0, 1. 5 and 2. 0 L· min-1 for germination. The changes of respiration rate and shoot length of germinating brown rice were observed. The contents of GABA and other essential substances in germinating brown rice were analyzed. It was indicated that at the range of 0. 5 -2. 0 L·min-1, the shoot growth and respiration rate of germinating brown rice were enhanced with the increase of temperature. The contents of free amino acids and reducing sugar in germinating brown rice increased while protein and starch decreased. Meantime the optimum aeration ratio for GABA accumulation was 1. 0 L· min-1.
