Title: Analysis of volatile components of lettuce by solid phase microextraction-GC-MS
Abstract: The volatile components of lettuce were extracted by solid phase microextraction combined with GC-MS.49 kinds of volatile components were identified.The results showed that aldehydes,alcohols and alkenes were the major volatile constituents.There were 11 kinds of aldehydes,4 of alcohols and 17 of alkenes in volatile components,which relative content was 34.11%,25.43% and 8.47%,respectively.
