Title: The Composition and Contents of Sugars and Acids in Three Types of Bananas
Abstract: The components and contents of sugars and acids in three types of bananas(Gongjiao,Brazilitan,Fenjiao)were determined by HPLC methods.The results showed that the main components of sugars were sucrose,glucose and fructose,and most of the sugars were sucrose in mature fruit.The ratio of sucrose/total sugars was 59.76%,66.18%,68.69% in Gongjiao,Brazilitan and Fenjiao,respectively.The total sugar contents of Gongjiao were the highest,while that of Fenjiao were the least.There were 11 kinds of organic acids in Gongjiao,Brazilitan and Fenjiao,the major ones was malic acid-based.The ratio of malic acid / total acid was 51.71%,47.30% and 46.68% respectively,while the ratio of citric acid/total acid was 18.13%,19.62% and 19.96%,respectively.The contents of major organic acids or the total acids of Fenjiao were the highest,while those of Gongjiao were the least.This study would provide some reference for the quality evaluation of banana fruit.
