Research was conducted to test the e...Microwave method was adopted to extract Cordyceps militaris to determine the purging effect of Cordyceps militaris extract on hydroxy radical and superoxide anion. Research was conducted to test the effect of acid-base treatment, heat treatment, ultraviolet exposure and common food additives on the oxidative stability of Cordyceps militaris extract. The results show that there is a high stability in Cordyceps militaris extract against the heat treatment and ultraviolet exposure. Yet, with the treatment of acid (pH4.5), base (pH9.0)or common food additives, there is a remarkable change in the oxidative stability of Cordyceps militaris extract.Read More
