Title: Study on synthesis and antimicrobial activity of a new food preservative mono-furfuryl fumarate
Abstract: A new asymmetrical ester containing α,β-unsaturated carbonyl group structure was prepared,and its antimicrobial activity was studied.Mono-furfuryl maleic ester was acquired by the esterification of maleic anhydride and furfuryl alcohol of 1∶1 molar ratio at 90℃ for 2~3h.Then isomeric catalyst aluminum chloride anhydrous was added and mono-furfuryl fumarate was prepared after reacting for 3~4h at 90℃ with a yield of 90%.The results of antimicrobial study showed that mono-furfuryl fumarate could inhibit the growth of milk spoilage bacteria remarkably,and its antimicrobial activity was better than sodium benzoate.
