Title: An optimization process of cassava micro-porous starch modified by glocoamylase
Abstract: Micro-porous starch granules were formed by the partially hydrolyzed from native cassava starch granules using glocoamylase.Absorption's properties of obtained cassava micro-porous starch with the different dosage of glocoamylase,the different pH value,the different temperature and the different hydrolysis time were studied.By above four factors,the orthogonal experiment through L9(34)found that temperature was the biggest effect to the properties of cassava starch granule.The best preparing conditions of cassava starch with glocoamylase hydrolysis were: 2.0% enzyme,pH=4.87,50 ℃ and 16 h for the reaction time.The experiment proved that the adsorption of pigment and oil by the micro-porous starch was significantly higher than that by the original starch granules.
