Title: Study on enzymatiic extraction of dietary fiber from peanut shell and its properties
Abstract: The technology of extracting dietary fiber from peanut shell was studied by two enzymes.Results showed that the hydrolyzation of protein reached 70.2%,and the product of dietary fiber were 81.5% under the conditions of dosage of cellulose and papain were both 0.4%,temperature was 50℃,pH6.0,hydrolysis 2.5h.The dietary fiber from this technology had higher water holding capacity,expansion and water combing power.
