Title: The study of preparation conditions for dietary fiber of soy bean dregs
Abstract: Dietary fiber from bean dregs was extracted by the method of alkali fishy smell elimination and protease hydrolysis to remove residual protein. The optimum conditions to removing fishy smell were defined by orthogonal test.Compared with raw bean dregs materials,water holding capacity of dietary fiber products increased by 86.95% and swelling property increased by 94.35%.
