Abstract: Formula of whey yoghurt using whey with addition of soy protein was optimized through orthogonal test.The results showed that the optimum formula is consisted of 14% of soy protein,with the ratios of soy protein solution and whey at 1∶2,7% of sugar,and 2.5% of mixed strains fermentation for 4 h.
