Abstract: Experiments were designed by the center composite design (CCD) for extracting tea green pigment (TGP) from low quality tea of Zhejiang Linan. The optimal conditions were achieved by using response surface analysis methodlogy(RSA). And the optimal conditions were found to be concentration of maltodextrin of 14.5%, the ratio of core to wall of 1∶6, the concentration of emulsifier of 0.8%, the inlet temperature 160 ℃, and the flow rate 53 mL/min. In this conditiong, the embedding ratio and the chlorophyll content of microencapsulation reach 88.53% and 5.65 mg/g, separately.
