Title: Optimization of Extraction Conditions of Banana Peel Pectin
Abstract: Using banana peel as the raw material to extract pectin,the effects of extraction time,temperature,pH and material to liquid ratio on extraction of pectin were investigated to optimize the extraction conditions.According to orthogonal experiment,the optimal extraction conditions were,extraction time,90 min,temperature,85 ℃;pH,1.5;and material to liquid ratio,1∶3(m / V,g∶mL).The influencing order of these factors was pHtemperature extraction time material to liquid ratio.Under the optimized conditions,the pectin yield extracted from banana peel reached to 6.23%;and the content of pectin in extract was 82.6%.
