Title: Quality Testing of Major Wheat Varieties and Lines in Shanxi
Abstract: The quality of 31 wheat varieties and lines grown or tested in the regional trials in Shanxi were tested according to international or national standard. The average values of these varieties were 36.0g for 1 000 kernel weight, 769.5g/L for unit weight, 58.7% for cutin rate, 61.0% for flour yield, 13.7% for protein content, 44.3% for wet gluten content, 14.5% for dry gluten content and 36.6ml for sedimentation value. According to the standard of wheat quality classification, the unit weight, flour yield and sedimentation value of the varieties grown in Shanxi were of middle level. Their protein and gluten content were relatively high. The quality of gluten was relatively low; most varieties were of middle gluten content, some reached the standard of high gluten wheat, no weak gluten varieties existed.
