Title: Ultrasonic Extraction of Polyphenols in Yam
Abstract: In this study,flavor as the yam material,the authors extracts total polyphenol from yam by means of ultrasonic assisted extraction.The best processing condition is attained by single factor and orthogonal experiment.In acetone solution with 50%concentration and 1∶20 of mass ratio,extracting time is 60 min at the temperature of 50 ℃,and the extraction is conducted 2 times while ultrasonic frequency is 800 W.In these conditions,the extraction rate of polyphenol is 16.97%.
