Title: Separation and identification of anthocyanins in black rice pigmented fraction by HPLC- ESI/MS
Abstract: Anthocyanins in the ethanol extracts from black rice pigmented fraction were separated and identified by HPLC coupled with electrospray ionization mass spectrometry.Our results demonstrated that the two major anthocyanins in the extract are cyanidin 3-glucoside and peonidin 3-glucoside by comparison with the authentic anthocyanins,and the cont- ents of these two anthocyanins are 38.0% and 5.2%,respectively.
