Title: Study on the preparation and physical properties of corn resistant starch
Abstract: Resistant starch was produced at 121 ℃ by raw corn starch.The parameters were studied which include autoclaving time,starch concentration,retrograding temperature and time,cooling speed.The optimum technology parameters were obtained: starch concentration is 30%,autoclaving at 121 ℃ for 30 min,cooled at room temperature,and then incubated for 12 h at 4 ℃,the yield of RS can reach 10.31%.Physical properties of RS were analysis by X-ray diffraction,micrograph and ultraviolet scan.
