Title: Rheological characteristic of xanthan gum and its synergistic characteristics
Abstract: The viscosity change of liquid xanthan with different concentration and the influence of shear rate and time on rheological characteristic were studied.Furthermore,the synergistic of xanthan gum with guar gum,CMC,pectin were also investigated.The results showed that viscosity of liquid xanthan increased gradually with the increase of concentration,the acquired equation was y=157.8x-182.07,a linear regression with the correlation coefficient 0.9838.Thixotropy measurement showed that xanthan gum viscosity decreased with the increase of shear rate and regained some during the deceleration process,which is a typical pseudoplastic property.The thixotropy loops was also formed.Viscosity of xanthan solutions with different concentration decreased gradually with the increase of shear rate,which showed liquid xanthan gum was a positive thixotropic liquid.It also concluded that xanthan and guar gum had definite synergistic and the viscosity reached to the tiptop 768.2mPa.s.Xanthan had no synergistic with CMC,pectin.
