The ...The stability of Chlorogenic Acid (CA) under different conditions was studied. UV spectrophotometry and RP-HPLC were used to determine the content of CA with 50% ethanol as the extraction solven. The order of factors that affected the stability of CA was oxidants, light and temperature. The oxidants had great impact on the stability of CA. Under the condition of pH 3, the oxidants had less effect, and the content of CA was still more 90% in four days. It provided a reference to extraction and analysis of the CA and production of CA.Read More
