Title: Study on hydrolysis of soybean protein isolated by enzymatic method
Abstract: This experiment mainly studied the effects of pretreatment temperature,pretreatment time,substrate concentration,added enzyme quantity(U/g SPI),enzymatic time,enzymatic temperature on SPI’s hydrolysis by AS1.398.And meanwhile,the optimal conditions of hydrolysis are determined by orthogonal design and analysis of variance.
