Title: Study on antioxidation activity in defferent kinds of vinegar
Abstract: The total phenols,total flavonoids content and DPPH radical scavenging activity in different varieties of vinegar were determined.The results showed that the different varieties of vinegar were rich in both total phenols and flavonoids,Aromatic vinegar has the highest concentrations,the total phenol content,total flavonoids,were 2.212 mg/ml and 1.623 mg/ml,respectively.White vinegar has the lowest total phenol content,total flavonoids,with 0.604 mg/ml and 0.438 mg/ml,respectively.Therefore,the total phenol content,total flavonoid content,DPPH radical scavenging rate can be used as indicators of antioxidant vinegar,to identify different kinds of vinegar.
