Title: Optimization of Technological Conditions for Preparing Microporous Starch by Combined-enzyme Method
Abstract: [Objective] With potato starch as raw material,the optimum technological conditions for preparing microporous starch were studied by combined-enzyme method.[Method] With starch oil absorption rate as experimental index,enzymolysis temperature,enzyme ratio,added quantity,substrate concentration,buffer solution pH and time were selected as influence factors to carry out orthogonal test.[Result] The optimum technological parameters are temperature 50 ℃,ratio 4∶1,added quantity 2.0%,substrate concentration 0.14 g/ml,pH 4,reaction time 9 h,oil absorption rate 83.2%.[Conclusion] The optimum technological parameters for preparing potato microporous starch by combined-enzyme method were obtained,which will provide reference basis for industrial production.
