Title: Influence of temperature on soybean oil oxidation characteristics and its shelf life prediction
Abstract: The accelerated test was performed on soybean oil at different temperatures,the peroxide value(POV) of soybean oil was measured by spectrophotometric method,and the basic law of the influence of temperature on the POV of soybean oil was analysed.The relation of oxidation time and logarithm of POV was fitted,and the shelf life of soybean oil was predicted through the Arrhenius formula under certain conditions.The results could provide basic data for the scientific preservation and packaging of soybean oil.
