Abstract:In this paper, the dynamic change property of amylose and amylopectin and relative enzymes of starch synthesis including ADPG pyrophosphorylose (ADPG-PPase), UDPG pyrophosphorylose (UDPG-PPase), Soubl...In this paper, the dynamic change property of amylose and amylopectin and relative enzymes of starch synthesis including ADPG pyrophosphorylose (ADPG-PPase), UDPG pyrophosphorylose (UDPG-PPase), Souble starch synthesis enzyme (S-STS), Granule bounded starch synthase(B-STS) and branching enzyme (Q-enzyme),were analysed during the development in wheat endosperm. The results indicated that the (accumulation) of amylose and amylopectin in wheat grain were simultaneous during the grain filling stage and the difference between two varieties was mainly in the relative (accumulating) ratio of two type starch,and the (changing) of amylose content appeared S shape. The results also showed that amylopectin content rised (quicker) than amylose content. It also revealed that the starch (accumulating) rate was highly significantly correlated with the activities of their related enzymes.Read More
