Title: Influence of sulfur dioxide on beer flavor stability
Abstract: The changing conditions of SO2were measured during the storage of beer,while the evolution of acetaldehyde,diacetyl and other beer flavoring substances were also determined.The result showed that adding SO2 to the beer could effectively improve the flavor stability of beer.
