Title: An Important Component in Luzhou Flavor Liquor-analysis of Ethyl Caprylate Content and Its Contribution
Abstract: In the major fragrant components of Luzhou flavor liquor,the absolute content of ethyl caprylate is not high.However ethyl caprylate contributed to the fragrance greater than ethyl acetate,ethyl lactate,and ethyl butyrate which are generally regarded as fragrant contributors,only less than ethyl caproate.GC-O sniffing technique also verified that trace amount of ethyl caprylate provided obvious fruit fragrance and moderate amount of ethyl caprylate promoted multi-fragrance,but surplus ethyl caprylate inhibited other fragrant components in the liquor body.Ethyl caprylate and its characters have also been confirmed in Fen flavor,Feng flavor liquors.
