Title: Study on Activity of Antihypertensive Peptides from Catfish Bone Hydrolysate
Abstract: Using catfish bone,the antihypertensive peptides was produced.The catfish was hydrolysised by Alkaline Protease,Neutral Protease,papain,Trypsin,pepsin and ACE Inhibition rate was detected using detection method in Vitro.The optimal Enzyme was selected.This paper showed the effet of Alkaline Protease addition,pH,tempetature,time,substrate concentration to ACE Inhibitory activity.The result was as followed: ACE Inhibitory activity was optimal using Alkaline Protease when Alkaline Protease addition was 500U/g,pH value was 8.5,tempetature was 60℃,substrate concentration was 0.33kg/L,time was 6h and ACE Inhibition rate was 88.36%.The ACE Inhibition rate was Higher than Nimodipine and Nifedipine when Enzymatic hydrolysis condition was best.
