This paper was focus on the influence of monascus pigment TR by illumination, temperatures, pH, metal ions (Cu2+ , Ca2+ , Mg2+ , K + and Na + ) and food additives (acidity regulator, sweeteners, preservatives and antioxidants). The results have showed that the solution of monascus pigment TR was poor in photo stability, the preservation rate of color value was 49.9% when the solution was under the outdoor ray in20 h; the solution with good thermal stability, the preservation rate of color value was 82% when the solution was heated at 120℃ for 1h; solution was stable when the pH was arrange from 3 to 11, no precipitate was formed and with bright color; precipitate was formed when the Fe2+ was exit in the solution; food additives (acidity regulator, sweeteners, preservatives and antioxidants) have a little influence on the solution.Read More
