Title: Variation Analysis of Main Chemical Components and Neutral Aroma Constituents in Flue-cured Tobacco Strips during Aging
Abstract: The changes of main chemical components and neutral aroma constituents in flue-cured tobacco strips at different aging stages,in different tobacco-planting areas and at different grades were analyzed during aging,and canonical correlation between chemical components and neutral aroma constituents was also analyzed.The results indicated that the contents of total sugar,reducing sugar and total alkaloids were continually decreased along with the proceeding of aging,while the contents of neutral aroma constituents were gradually increased except for neoplytadiene.The contents of total sugar,reducing sugar,Maillard reaction products and products degraded by carotene had significant difference between the initial and the final aging stages,there also existed significant difference in total sugar,reducing sugar,total alkaloids,ratio of reducing sugar to total alkaloids and aromatic amino acid metabolism products between B2F and C3F.Canonical correlation analysis showed that total alkaloids had higher positive correlation with aromatic amino acid metabolism products,products degraded by cembrane and products degraded by carotene;neoplytadiene and the total contents of neutral aroma constituents had higher positive correlation with total sugar and reducing sugar.
